Inside out meatball
This was my attempt at a meatball stuffed with pasta. It was huge, it’s in a large cast iron pan. My boys did not like it at all… too much meat. Landed up in the trash.
Shrimp Scampi
First time attempt at shrimp scampi. Just for Noah and I. Based on how clean his plate was, I can safely say he enjpyed it. Although I periodically look out in the dog run to see if he dumped his plate out his window, not that he has done that. Now his older brother Brandon stuffed food in his sock once and tossed it out his window… this was years ago, I was still learning!
Dehydrated Pineapple Flowers
In no way did these resemble flowers, but they tasted damn good… and you know what they say about pineapple?? Look it up, haha. I made these months ago, maybe I should attempt them again, i happen to have fresh pineapple right now. Key is, ya gotta slice them really thin, without cutting yourself.
Stuffed Bell Peppers
These are surprisingly easy to make. Don’t bother if your kids refuse to eat a bell pepper. The stuffing can really be anything, especially because the kids wouldn’t eat it! I personally liked them. Quinoa, a ltlle bit of panko, various veggies and cheese. I had everything cooked for the most part before stuffing, so it was just waiting for the pepper to cook and a quick break under the broiler.
